There is one particularly special type of lamb we offer on Flinders Island. In the past it has built up a tremendous following by chefs on the eastern sea-board, especially prestigious restaurants in Sydney’s Darling Harbour, CBD, Circular Quay and the Rocks. This specialty product is Milk Fed Lamb.
Flinders Island Milk Fed Lambs have a dress weight at between 8 and 10 kilos, and are processed before they are weaned. These lambs are purpose bred by our select group of farmers, and hand reared to ensure the best possible lamb product you can find anywhere. Most cuts come out at around ½ the size of traditional lamb cuts, but what is most endearing about Milk Fed Lamb is the incredible tenderness and juiciness, and the unique flavour. It really is something every diner should be able to experience. The pastures that are lightly dusted with a covering of sea salt from the crisp ocean winds gives something a little extra to the flavour of all livestock on Flinders Island – and this is even translated to our unique Milk Fed Lamb product.
There is a reason that these lambs gained such a name for themselves and such a reputation amongst some of the country’s most famous chefs – and we are now offering them to discerning chefs all over the country again.
